Ingredients:

  • 18 oz semi-sweet chocolate chips
  • 14 oz sweetened condensed milk
  • 1 tsp pure vanilla extract

Instructions:

  1. Line the pan. Place parchment paper in an 8x8 inch baking pan, leaving a bit of overhang on the sides.
  2. Combine the base. Pour the 18 oz semi sweet chocolate chips and 14 oz sweetened condensed milk into a heavy bottomed saucepan.
  3. Apply low heat. Turn the burner to the lowest setting.
  4. Stir constantly. Use a silicone spatula to keep the mixture moving until the chips are almost entirely melted.
  5. Remove from heat. Take the pan off the burner while there are still a few tiny lumps of chocolate visible.
  6. Add the flavor. Stir in the 1 tsp pure vanilla extract vigorously.
  7. Final smoothing. Continue stirring until the mixture is completely glossy and smooth.
  8. Transfer the fudge. Pour the thick liquid into your prepared pan and spread it to the corners.
  9. Tap the pan. Give the pan a firm tap on the counter until air bubbles rise to the surface.
  10. Master the set. Let it cool at room temperature for 30 minutes, then refrigerate for 2 hours until firm to the touch.
