Ingredients:
- 1 pre-baked 9-inch pie crust
- 3 oz strawberry gelatin powder
- 1 cup granulated sugar
- 4 tbsp cornstarch
- 1.5 cups 7Up
- 2 lbs fresh strawberries, hulled and sliced
Instructions:
- Hull and slice the fresh strawberries into uniform quarters, then arrange them densely in the pre-baked crust, piling them high in the center to create a dome effect.
- Combine the strawberry gelatin, sugar, and cornstarch in a medium saucepan and slowly whisk in the 7Up.
- Place the saucepan over medium heat and bring to a gentle boil, whisking for 3–4 minutes until the mixture thickens and becomes translucent.
- Remove the glaze from heat and allow it to cool for 5 minutes to prevent the berries from softening.
- Pour the glaze evenly over the strawberries, using a spatula to ensure it fills all the gaps.
- Place the pie in the refrigerator for at least 4 hours to allow the cornstarch-gelatin bond to set completely before slicing.
