Ingredients:
- 8 bone-in, skin-on chicken drumsticks (approx. 2 lbs)
- 1 tbsp All-purpose flour
- 1 tsp Baking powder
- 1 tsp Garlic powder
- 1 tsp Smoked paprika
- 1 tsp Onion powder
- 1/2 tsp Kosher salt
- 1/2 tsp Cracked black pepper
- 1 tbsp Avocado oil
- 3 tbsp Unsalted butter, melted
- 3 cloves Garlic, finely minced
- 1 tbsp Fresh parsley, chopped
- 1 tsp Fresh rosemary, minced
- 1/2 tsp Lemon zest
Instructions:
- Pat the chicken drumsticks bone-dry with paper towels to ensure all surface moisture is removed for maximum crispiness.
- Place the chicken in a large mixing bowl and toss with avocado oil until lightly and evenly coated.
- In a small bowl, whisk together the flour, baking powder, garlic powder, smoked paprika, onion powder, salt, and black pepper.
- Sprinkle the dry seasoning mixture over the chicken, tossing vigorously until the flour mixture is evenly distributed and no clumps remain.
- Preheat your air fryer to 400°F (200°C).
- Arrange the drumsticks in a single layer in the air fryer basket, ensuring they do not touch to allow for proper air circulation.
- Cook for 10 minutes, then use tongs to flip each leg until the underside is starting to brown. Cook for another 8-10 minutes until the skin is dark golden and the internal temp hits 165°F.
- While the chicken is cooking, whisk together the melted butter, minced garlic, parsley, rosemary, and lemon zest in a large bowl.
- Once the chicken is finished, immediately toss the hot drumsticks in the garlic herb butter glaze and serve.
