Ingredients:

  • 8 bone-in, skin-on chicken drumsticks (approx. 2 lbs)
  • 1 tbsp All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • 1 tsp Onion powder
  • 1/2 tsp Kosher salt
  • 1/2 tsp Cracked black pepper
  • 1 tbsp Avocado oil
  • 3 tbsp Unsalted butter, melted
  • 3 cloves Garlic, finely minced
  • 1 tbsp Fresh parsley, chopped
  • 1 tsp Fresh rosemary, minced
  • 1/2 tsp Lemon zest

Instructions:

  1. Pat the chicken drumsticks bone-dry with paper towels to ensure all surface moisture is removed for maximum crispiness.
  2. Place the chicken in a large mixing bowl and toss with avocado oil until lightly and evenly coated.
  3. In a small bowl, whisk together the flour, baking powder, garlic powder, smoked paprika, onion powder, salt, and black pepper.
  4. Sprinkle the dry seasoning mixture over the chicken, tossing vigorously until the flour mixture is evenly distributed and no clumps remain.
  5. Preheat your air fryer to 400°F (200°C).
  6. Arrange the drumsticks in a single layer in the air fryer basket, ensuring they do not touch to allow for proper air circulation.
  7. Cook for 10 minutes, then use tongs to flip each leg until the underside is starting to brown. Cook for another 8-10 minutes until the skin is dark golden and the internal temp hits 165°F.
  8. While the chicken is cooking, whisk together the melted butter, minced garlic, parsley, rosemary, and lemon zest in a large bowl.
  9. Once the chicken is finished, immediately toss the hot drumsticks in the garlic herb butter glaze and serve.
