Ingredients:
- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (100g) brown sugar, packed
- 1 tsp (5g) baking soda
- 1/2 tsp (2g) salt
- 1 tbsp (6g) pumpkin pie spice
- 1/2 cup (120ml) pumpkin purée
- 1/2 cup (120ml) neutral oil
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (140g) firm apple, finely diced
- 1/4 cup (30g) all-purpose flour
- 1/4 cup (50g) brown sugar
- 1 tsp (2g) ground cinnamon
- 2 tbsp (28g) cold unsalted butter, cubed
Instructions:
- Preheat oven to 375°F (190°C). In a large mixing bowl, whisk together the flour, brown sugar, baking soda, salt, and pumpkin pie spice until no large clumps remain.
- Create a well in the center of the dry ingredients. Pour in the pumpkin purée, neutral oil, egg, and vanilla extract. Stir with a spatula or whisk until just combined; do not over-mix.
- Gently fold the finely diced apples into the batter.
- Divide the batter evenly among 12 slots of a standard muffin tin.
- Combine the streusel ingredients (flour, brown sugar, cinnamon, and cold butter) by rubbing them together until crumbly. Top each muffin with a pinch of the mixture.
- Bake for 22–25 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs.
