Ingredients:
- 450g tomatoes, cubed
- 300g cucumber, sliced into half-moons
- 60g red onion, thinly sliced
- 150g green bell pepper, sliced into rings
- 75g Kalamata olives, pitted
- 200g Feta cheese
- 60ml extra virgin olive oil
- 15ml red wine vinegar
- 2g dried oregano
- 3g salt
- 1g black pepper
Instructions:
- Cut the tomatoes and cucumbers into uniform, chunky pieces. Slice the red onion into paper-thin half-moons.
- Combine the olive oil, red wine vinegar, oregano, salt, and pepper in a small jar. Shake vigorously for 30 seconds until the mixture is opaque and the oregano is evenly suspended.
- Place the chopped vegetables and olives in a large bowl. Pour the dressing over the top and toss gently to coat.
- Place the block of feta on top or cut it into large, thick cubes for a traditional presentation.
