Ingredients:

  • 450g tomatoes, cubed
  • 300g cucumber, sliced into half-moons
  • 60g red onion, thinly sliced
  • 150g green bell pepper, sliced into rings
  • 75g Kalamata olives, pitted
  • 200g Feta cheese
  • 60ml extra virgin olive oil
  • 15ml red wine vinegar
  • 2g dried oregano
  • 3g salt
  • 1g black pepper

Instructions:

  1. Cut the tomatoes and cucumbers into uniform, chunky pieces. Slice the red onion into paper-thin half-moons.
  2. Combine the olive oil, red wine vinegar, oregano, salt, and pepper in a small jar. Shake vigorously for 30 seconds until the mixture is opaque and the oregano is evenly suspended.
  3. Place the chopped vegetables and olives in a large bowl. Pour the dressing over the top and toss gently to coat.
  4. Place the block of feta on top or cut it into large, thick cubes for a traditional presentation.
