Ingredients:
- ½ small red onion (60g), thinly sliced into half-moons
- ½ cup (120ml) apple cider vinegar
- 1 tsp (5g) granulated sugar
- ½ tsp (3g) sea salt
- 1 large ripe avocado (200g)
- 1 tbsp (15ml) fresh lime juice
- ¼ tsp (1.5g) salt
- ⅛ tsp (0.5g) cracked black pepper
- 2 slices (80g) sourdough bread
- 1 tbsp (15ml) extra virgin olive oil
Instructions:
- Combine the sliced red onion, apple cider vinegar, sugar, and salt in a glass jar. Stir until the sugar dissolves and let sit at room temperature.
- Scoop the avocado into a bowl. Add lime juice, salt, and pepper. Mash with a fork until desired consistency is reached.
- Heat olive oil in a skillet over medium-high heat. Sear bread slices for 2 minutes per side until edges are mahogany-colored.
- Spread a generous layer of avocado mash over the hot toast and top with drained pickled red onions.
