Ingredients:

  • ½ small red onion (60g), thinly sliced into half-moons
  • ½ cup (120ml) apple cider vinegar
  • 1 tsp (5g) granulated sugar
  • ½ tsp (3g) sea salt
  • 1 large ripe avocado (200g)
  • 1 tbsp (15ml) fresh lime juice
  • ¼ tsp (1.5g) salt
  • ⅛ tsp (0.5g) cracked black pepper
  • 2 slices (80g) sourdough bread
  • 1 tbsp (15ml) extra virgin olive oil

Instructions:

  1. Combine the sliced red onion, apple cider vinegar, sugar, and salt in a glass jar. Stir until the sugar dissolves and let sit at room temperature.
  2. Scoop the avocado into a bowl. Add lime juice, salt, and pepper. Mash with a fork until desired consistency is reached.
  3. Heat olive oil in a skillet over medium-high heat. Sear bread slices for 2 minutes per side until edges are mahogany-colored.
  4. Spread a generous layer of avocado mash over the hot toast and top with drained pickled red onions.
