Ingredients:

  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar, packed
  • 1/3 cup unsulphured molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup granulated sugar

Instructions:

  1. In a large bowl, beat the room-temperature butter and brown sugar on medium-high until the mixture looks pale and fluffy (about 2–3 minutes).
  2. Add the molasses, egg, and vanilla extract. Beat on medium speed until the batter is smooth and a deep, rich brown.
  3. In a separate bowl, whisk together the flour, ground ginger, cinnamon, baking soda, and salt.
  4. Turn the mixer to low and gradually add the flour mixture to the wet ingredients. Mix only until the white streaks of flour disappear.
  5. Use a cookie scoop to form generous balls of dough.
  6. Roll each ball in the granulated sugar until evenly coated.
  7. Place balls 2 inches apart on a lined sheet. Bake at 350°F (175°C) for 10–12 minutes until edges are set but centers look slightly soft.
  8. Let the cookies rest on the pan for 5 minutes before transferring them to a wire rack.
