Ingredients:
- 1 cup unsalted butter, room temperature
- 1 cup brown sugar, packed
- 1/3 cup unsulphured molasses
- 1 large egg
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup granulated sugar
Instructions:
- In a large bowl, beat the room-temperature butter and brown sugar on medium-high until the mixture looks pale and fluffy (about 2–3 minutes).
- Add the molasses, egg, and vanilla extract. Beat on medium speed until the batter is smooth and a deep, rich brown.
- In a separate bowl, whisk together the flour, ground ginger, cinnamon, baking soda, and salt.
- Turn the mixer to low and gradually add the flour mixture to the wet ingredients. Mix only until the white streaks of flour disappear.
- Use a cookie scoop to form generous balls of dough.
- Roll each ball in the granulated sugar until evenly coated.
- Place balls 2 inches apart on a lined sheet. Bake at 350°F (175°C) for 10–12 minutes until edges are set but centers look slightly soft.
- Let the cookies rest on the pan for 5 minutes before transferring them to a wire rack.
