Ingredients:
- 1 cup (225g) unsalted butter
- ¾ cup (150g) brown sugar, packed
- ½ cup (100g) granulated sugar
- ½ cup (120g) 100% pure pumpkin purée (blotted)
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 ¼ cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tsp (5g) ground cinnamon
- 1 tsp (2g) pumpkin pie spice
- 1 cup (170g) semi-sweet chocolate chips
- 2 tbsp (25g) granulated sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- Place the butter in a saucepan over medium heat. Melt and stir constantly until the butter foams, crackles, and develops small brown specks at the bottom and a nutty aroma. Remove from heat immediately.
- Scoop the pumpkin purée onto a plate lined with paper towels and press another towel on top to blot away excess moisture.
- Whisk the browned butter with the brown sugar and 100g of granulated sugar. Beat in the blotted pumpkin, egg, and vanilla until smooth.
- In a separate bowl, sift together the all-purpose flour, baking soda, salt, 5g of cinnamon, and pumpkin pie spice.
- Fold the dry ingredients into the wet mixture until just combined. Fold in semi-sweet chocolate chips if using.
- Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough and roll into balls.
- Roll each dough ball in a mixture of 25g granulated sugar and 2g ground cinnamon until evenly coated.
- Place cookies on a lined baking sheet and bake for 10–12 minutes.
