Ingredients:
- 1 cup (225g) unsalted butter
- ½ tsp (3g) salt
- ¾ cup (150g) brown sugar, packed
- ½ cup (100g) granulated sugar
- ½ cup (120g) canned pumpkin puree
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (2g) baking soda
- 1 tsp (2g) ground cinnamon
- ½ tsp (1g) ground ginger
- ¼ tsp (0.5g) ground cloves
- 1 ½ cups (135g) old-fashioned rolled oats
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Place the butter in a light-colored skillet over medium heat. Melt and continue to cook, whisking constantly. Once the butter foams and mahogany-colored bits form at the bottom with a nutty aroma, remove from heat immediately. Stir in the salt and let cool for 15 minutes.
- In a large bowl, combine the cooled brown butter with brown sugar and granulated sugar. Beat until smooth and sugars have begun to dissolve.
- Mix in the pumpkin puree, room temperature egg, and vanilla extract until the mixture is fully emulsified.
- In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, ginger, and cloves.
- Gradually stir the flour mixture into the wet ingredients until just combined.
- Gently fold in the old-fashioned rolled oats and semi-sweet chocolate chips using a rubber spatula.
- Scoop the dough onto baking sheets lined with parchment paper.
- Bake for 14 minutes until the edges are set and slightly golden.
