Ingredients:
- 2 cups (250g) cake flour, sifted
- 1 tsp (5g) baking soda
- 1 tsp (4g) baking powder
- ½ tsp (3g) sea salt
- 2 tsp (5g) ground cinnamon
- ½ tsp (1g) ground nutmeg
- ¼ tsp (0.5g) ground cloves
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) light brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp (5ml) pure vanilla extract
- ½ cup (120g) plain Greek yogurt, room temperature
- ¼ cup (60ml) whole milk
- ½ cup (60g) powdered sugar
- 1 tbsp (15ml) milk
- ¼ tsp (1g) ground cinnamon
- ½ tsp (2.5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x9 inch square baking pan with butter and line the bottom with parchment paper.
- In a medium bowl, whisk together the cake flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until no clumps remain.
- In a large bowl, beat the softened butter and brown sugar on medium-high for 3 minutes until pale and fluffy.
- Add the eggs one at a time, beating well after each, then stir in the vanilla extract.
- Reduce mixer speed to low. Add one-third of the flour mixture, followed by half of the Greek yogurt and milk. Repeat the process, ending with the flour, mixing only until the last streaks of flour disappear.
- Pour the batter into the prepared pan and bake for 30–35 minutes, or until the edges pull away from the pan and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
- Whisk together the powdered sugar, milk, cinnamon, and vanilla extract until smooth, then drizzle over the cake while it is still slightly warm.
