Ingredients:

  • 2 cups (250g) cake flour, sifted
  • 1 tsp (5g) baking soda
  • 1 tsp (4g) baking powder
  • ½ tsp (3g) sea salt
  • 2 tsp (5g) ground cinnamon
  • ½ tsp (1g) ground nutmeg
  • ¼ tsp (0.5g) ground cloves
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • ½ cup (120g) plain Greek yogurt, room temperature
  • ¼ cup (60ml) whole milk
  • ½ cup (60g) powdered sugar
  • 1 tbsp (15ml) milk
  • ¼ tsp (1g) ground cinnamon
  • ½ tsp (2.5ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch square baking pan with butter and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the cake flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until no clumps remain.
  3. In a large bowl, beat the softened butter and brown sugar on medium-high for 3 minutes until pale and fluffy.
  4. Add the eggs one at a time, beating well after each, then stir in the vanilla extract.
  5. Reduce mixer speed to low. Add one-third of the flour mixture, followed by half of the Greek yogurt and milk. Repeat the process, ending with the flour, mixing only until the last streaks of flour disappear.
  6. Pour the batter into the prepared pan and bake for 30–35 minutes, or until the edges pull away from the pan and a toothpick inserted into the center comes out with a few moist crumbs.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  8. Whisk together the powdered sugar, milk, cinnamon, and vanilla extract until smooth, then drizzle over the cake while it is still slightly warm.
