Ingredients:
- 2 cups (280g) shredded rotisserie chicken
- 8 oz (225g) full-fat cream cheese, softened
- 1/2 cup (120ml) ranch dressing
- 1/2 cup (120ml) buffalo wing sauce
- 1/2 tsp garlic powder
- 1 cup (100g) sharp cheddar cheese, hand-shredded
- 1/2 cup (50g) monterey jack cheese, shredded
Instructions:
- In a mixing bowl, beat the softened cream cheese until smooth.
- Stir in 1/2 cup ranch and 1/2 cup buffalo sauce. Mix in 1/2 tsp garlic powder until well combined.
- Fold in the shredded rotisserie chicken and half of the shredded cheese (cheddar and monterey jack blend). Ensure chicken is in small, bite-sized pieces for easy scooping.
- Transfer the mixture to a 9x9 inch baking dish or 10-inch cast iron skillet, smoothing the top with a spatula.
- Top with the remaining cheese. Bake at 350°F (175°C) for 20 minutes until golden and crackling.
- Let it rest for 5 minutes before serving to let the sauce set.
