Ingredients:

  • 2 cups (280g) shredded rotisserie chicken
  • 8 oz (225g) full-fat cream cheese, softened
  • 1/2 cup (120ml) ranch dressing
  • 1/2 cup (120ml) buffalo wing sauce
  • 1/2 tsp garlic powder
  • 1 cup (100g) sharp cheddar cheese, hand-shredded
  • 1/2 cup (50g) monterey jack cheese, shredded

Instructions:

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Stir in 1/2 cup ranch and 1/2 cup buffalo sauce. Mix in 1/2 tsp garlic powder until well combined.
  3. Fold in the shredded rotisserie chicken and half of the shredded cheese (cheddar and monterey jack blend). Ensure chicken is in small, bite-sized pieces for easy scooping.
  4. Transfer the mixture to a 9x9 inch baking dish or 10-inch cast iron skillet, smoothing the top with a spatula.
  5. Top with the remaining cheese. Bake at 350°F (175°C) for 20 minutes until golden and crackling.
  6. Let it rest for 5 minutes before serving to let the sauce set.
