Ingredients:

  • 115g unsalted butter, softened
  • 150g packed dark brown sugar
  • 50g granulated white sugar
  • 1 large egg (50g)
  • 5ml vanilla extract
  • 250g all-purpose flour
  • 5g baking soda
  • 3g salt
  • 130g butterscotch chips
  • 130g semi-sweet chocolate chips
  • 3g flaky sea salt

Instructions:

  1. Cream together the softened butter, dark brown sugar, and white sugar until pale and fluffy, approximately 2 minutes.
  2. Stir in the egg and vanilla extract until the mixture is fully combined and smooth.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Slowly stir the dry ingredients into the wet base using a spatula, stopping as soon as no white streaks of flour remain.
  5. Fold in the butterscotch chips and semi-sweet chocolate chips until evenly distributed.
  6. Chill the dough for 30 minutes to prevent spreading.
  7. Scoop rounded tablespoons of dough onto a lined baking sheet.
  8. Bake at 350°F (175°C) for 10–12 minutes until edges are light mahogany brown but centers remain soft.
  9. Remove from oven, immediately sprinkle with flaky sea salt, and let firm up on the pan for 5 minutes.
