Ingredients:
- 115g unsalted butter, softened
- 150g packed dark brown sugar
- 50g granulated white sugar
- 1 large egg (50g)
- 5ml vanilla extract
- 250g all-purpose flour
- 5g baking soda
- 3g salt
- 130g butterscotch chips
- 130g semi-sweet chocolate chips
- 3g flaky sea salt
Instructions:
- Cream together the softened butter, dark brown sugar, and white sugar until pale and fluffy, approximately 2 minutes.
- Stir in the egg and vanilla extract until the mixture is fully combined and smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Slowly stir the dry ingredients into the wet base using a spatula, stopping as soon as no white streaks of flour remain.
- Fold in the butterscotch chips and semi-sweet chocolate chips until evenly distributed.
- Chill the dough for 30 minutes to prevent spreading.
- Scoop rounded tablespoons of dough onto a lined baking sheet.
- Bake at 350°F (175°C) for 10–12 minutes until edges are light mahogany brown but centers remain soft.
- Remove from oven, immediately sprinkle with flaky sea salt, and let firm up on the pan for 5 minutes.
