  • 1 pound Breakfast Pork Sausage (mild or hot)
  • 2 cups Baking Mix (e.g., Bisquick)
  • 2 cups Sharp Cheddar Cheese (packed, freshly grated)
  • 1/4 cup Whole Milk
  • 1 teaspoon Worcestershire Sauce
  • 1/2 teaspoon Dried Mustard Powder
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 1/4 teaspoon Onion Powder (Optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line two standard baking sheets with parchment paper or silicone baking mats.
  2. In the large mixing bowl, whisk together the baking mix, shredded cheddar cheese, mustard powder, black pepper, and onion powder (if using).
  3. Pour the whole milk and the Worcestershire sauce into the dry ingredients. Stir lightly to begin integrating the liquid.
  4. Add the cold breakfast sausage to the mixture.
  5. Using your hands or a stand mixer on low speed, mix all the ingredients together until just combined and uniform. The mixture should be tacky and firm, but avoid overmixing.
  6. Using a 1.5-inch (4 cm) cookie scoop, portion the mixture into uniform balls. Roll lightly between your palms to smooth the shape, if necessary.
  7. Place the sausage balls onto the prepared baking sheets, ensuring they are spaced about 1 inch (2.5 cm) apart.
  8. Bake for 20 to 25 minutes, or until golden brown and the internal temperature registers 165°F (74°C).
  9. Remove from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve warm.
