Ingredients:
- 3 large overripe bananas, mashed (340g)
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
- In a large bowl, mash the bananas until they form a smooth, creamy paste. Stir in the melted butter and brown sugar until the mixture looks glossy and uniform. Whisk in the egg and vanilla until fully incorporated.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gently pour the dry mix into the wet base. Use a spatula to fold the ingredients together until no more streaks of white flour are visible. Fold in 3/4 cup of the chocolate chips.
- Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining 1/4 cup of chocolate chips over the surface.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
