Ingredients:
- 3 ripe bananas, mashed
- 1 cup grated zucchini, squeezed dry
- 1/2 cup melted unsalted butter
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 3/4 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Grate the zucchini and use a clean kitchen towel or paper towel to squeeze out excess water.
- Mash the bananas until smooth, leaving a few small lumps for texture.
- In a large mixing bowl, whisk the melted butter and brown sugar together until combined.
- Stir in the egg, vanilla, mashed bananas, and squeezed zucchini.
- Slowly fold in the flour, baking soda, salt, and cinnamon. Stir only until no streaks of flour remain.
- Gently fold in the semi-sweet chocolate chips.
- Pour the batter into the pan, smoothing the top with a spatula.
- Bake for 50-60 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
