Ingredients:

  • 3 ripe bananas, mashed
  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup melted unsalted butter
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3/4 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Grate the zucchini and use a clean kitchen towel or paper towel to squeeze out excess water.
  3. Mash the bananas until smooth, leaving a few small lumps for texture.
  4. In a large mixing bowl, whisk the melted butter and brown sugar together until combined.
  5. Stir in the egg, vanilla, mashed bananas, and squeezed zucchini.
  6. Slowly fold in the flour, baking soda, salt, and cinnamon. Stir only until no streaks of flour remain.
  7. Gently fold in the semi-sweet chocolate chips.
  8. Pour the batter into the pan, smoothing the top with a spatula.
  9. Bake for 50-60 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
