Ingredients:
- 1 lb organic strawberries, firm
- 8 oz dark chocolate (60% cacao), finely chopped
- 1 tsp refined coconut oil
- 2 oz white chocolate, for drizzling
Instructions:
- Wash the 1 lb of strawberries gently in cold water. Do not soak them, or they will absorb water and become mushy.
- Pat each berry completely dry with a paper towel. Wait 10 mins until the skin feels slightly tacky.
- Remove the green leaves by hand. Pull them straight up and off.
- Use a paring knife to cut a small V shape into the top of the berry where the stem was.
- Slice the berry in half vertically, from the center of that V down to the tip. Each half should now look like a perfect heart.
- Place the 8 oz dark chocolate and 1 tsp coconut oil in a glass bowl.
- Microwave in 20 second bursts. Stir vigorously between each burst until velvety and smooth.
- Let the chocolate sit for 2 mins to cool slightly. This prevents the chocolate from being too thin and running off the fruit.
- Insert a toothpick into the side of a strawberry half.
- Submerge the berry into the dark chocolate. Dip until the red skin is completely cloaked.
- Lift and shake gently to remove excess. The coating should look thin and even.
- Place onto parchment paper. Repeat with remaining 14 servings.
- Melt the 2 oz white chocolate in a small baggie.
- Snip a tiny corner off the bag. Drizzle in a zig zag pattern across the dark shells.
- Chill in the fridge for 20 mins until the chocolate is matte and firm to the touch.
