Ingredients:

  • 1.5 cups (355ml) pure unsweetened coconut water, chilled
  • 2 cups (300g) frozen pineapple chunks
  • 1 tbsp (15ml) fresh lime juice
  • 1 tsp (5g) fresh grated ginger
  • 7 fresh mint leaves

Instructions:

  1. Pour the chilled coconut water into the blender canister first to create a vortex for the frozen ingredients.
  2. Add the frozen pineapple chunks, lime juice, and grated ginger. Start on the lowest speed and gradually increase to high, blending for 45–60 seconds until smooth.
  3. Add the fresh mint leaves during the final 10 seconds of blending to preserve their essential oils and create fine green flecks.
