Ingredients:
- 1.5 cups (355ml) pure unsweetened coconut water, chilled
- 2 cups (300g) frozen pineapple chunks
- 1 tbsp (15ml) fresh lime juice
- 1 tsp (5g) fresh grated ginger
- 7 fresh mint leaves
Instructions:
- Pour the chilled coconut water into the blender canister first to create a vortex for the frozen ingredients.
- Add the frozen pineapple chunks, lime juice, and grated ginger. Start on the lowest speed and gradually increase to high, blending for 45–60 seconds until smooth.
- Add the fresh mint leaves during the final 10 seconds of blending to preserve their essential oils and create fine green flecks.
