Ingredients:
- 1 pre-baked 9-inch pie crust
- 2 lbs fresh strawberries, hulled and sliced into quarters
- 1 package (85g) strawberry-flavored gelatin
- 1 cup water
- 1 tbsp cornstarch
- 2 tbsp cold water
- 1 tsp lemon juice
Instructions:
- Ensure the pre-baked pie crust is completely cooled to room temperature.
- Combine strawberry gelatin and 1 cup of water in a medium saucepan. Bring to a simmer over medium heat, whisking constantly until the granules are fully dissolved.
- In a small ramekin, whisk cornstarch and 2 tablespoons of cold water into a smooth slurry. Stir the slurry into the simmering gelatin.
- Continue to cook for 1-2 minutes until the mixture thickens and becomes glossy. Remove from heat and stir in the lemon juice.
- Arrange the sliced strawberries in the cooled pie crust, piling them high to create a dome effect.
- Allow the glaze to cool for approximately 10 minutes until thick but still pourable. Slowly pour the glaze over the berries, ensuring it fills all gaps between the fruit.
- Refrigerate for at least 4 hours, or until the glaze is set and firm.
