Ingredients:

  • 1 pre-baked 9-inch pie crust
  • 2 lbs fresh strawberries, hulled and sliced into quarters
  • 1 package (85g) strawberry-flavored gelatin
  • 1 cup water
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • 1 tsp lemon juice

Instructions:

  1. Ensure the pre-baked pie crust is completely cooled to room temperature.
  2. Combine strawberry gelatin and 1 cup of water in a medium saucepan. Bring to a simmer over medium heat, whisking constantly until the granules are fully dissolved.
  3. In a small ramekin, whisk cornstarch and 2 tablespoons of cold water into a smooth slurry. Stir the slurry into the simmering gelatin.
  4. Continue to cook for 1-2 minutes until the mixture thickens and becomes glossy. Remove from heat and stir in the lemon juice.
  5. Arrange the sliced strawberries in the cooled pie crust, piling them high to create a dome effect.
  6. Allow the glaze to cool for approximately 10 minutes until thick but still pourable. Slowly pour the glaze over the berries, ensuring it fills all gaps between the fruit.
  7. Refrigerate for at least 4 hours, or until the glaze is set and firm.
