Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon fine sea salt
- 0.5 teaspoon garlic powder
- 1 cup full-fat small curd cottage cheese
- 2 large eggs
- 4 tablespoons unsalted butter, melted and cooled
- 1 tablespoon honey
Instructions:
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone mat.
- In a separate smaller bowl, whisk the 2 eggs with 1 tablespoon honey until smooth. Fold in the 1 cup cottage cheese and the 4 tablespoons of melted, cooled butter. Look for a uniform, creamy consistency.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, sea salt, and garlic powder until well combined.
- Pour the wet ingredients into the dry. Use a spatula to fold the mixture together until just combined and no dry flour remains.
- Scoop the dough into 8 even mounds on your prepared baking sheet. Leave about 2 inches of space between them to allow for heat circulation.
- Bake at 400°F for 15 minutes until the tops are deeply golden and the bottoms feel firm.
