Ingredients:
- 2 cups whole milk
- 2 tbsp heavy cream
- 2 tbsp unsweetened Dutch-processed cocoa powder
- 2 oz high-quality dark chocolate (60-70% cacao), finely chopped
- 2.5 tbsp granulated sugar
- 1/8 tsp fine sea salt
- 1/2 tsp pure vanilla extract
Instructions:
- In a small saucepan, whisk together the cocoa powder, sugar, salt, and 2 tablespoons of the milk. Place over low heat and whisk until a thick, smooth mahogany paste forms to bloom the cocoa.
- Slowly pour in the remaining milk and heavy cream while whisking constantly. Increase the heat to medium-low until the liquid is steaming and tiny bubbles form around the edges, ensuring it does not reach a rolling boil.
- Add the finely chopped dark chocolate to the steaming liquid. Whisk vigorously in a circular motion until the chocolate is completely emulsified and frothy. Remove from heat and stir in the vanilla extract before serving.
