Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 0.5 cup (45g) Dutch-process cocoa powder
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) salt
  • 0.5 cup (115g) vegetable oil
  • 1 cup (200g) packed light brown sugar
  • 2 large (100g) eggs
  • 1 tsp (5ml) pure vanilla extract
  • 1.5 cups (170g) grated zucchini, unpeeled
  • 1 cup (170g) semi-sweet mini chocolate chips

Instructions:

  1. Whisk together the flour, cocoa powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, beat the oil, brown sugar, eggs, and vanilla until the mixture is smooth and glossy.
  3. Gently fold the grated zucchini and chocolate chips into the wet mixture, then combine with the dry ingredients, stirring just until no streaks of flour remain.
  4. Pour the batter into a greased 9x5 inch loaf pan.
  5. Bake at 350°F (175°C) for 45–55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
