Ingredients:
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (45g) Dutch-process cocoa powder
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 0.5 cup (115g) vegetable oil
- 1 cup (200g) packed light brown sugar
- 2 large (100g) eggs
- 1 tsp (5ml) pure vanilla extract
- 1.5 cups (170g) grated zucchini, unpeeled
- 1 cup (170g) semi-sweet mini chocolate chips
Instructions:
- Whisk together the flour, cocoa powder, baking soda, and salt in a large bowl.
- In a separate bowl, beat the oil, brown sugar, eggs, and vanilla until the mixture is smooth and glossy.
- Gently fold the grated zucchini and chocolate chips into the wet mixture, then combine with the dry ingredients, stirring just until no streaks of flour remain.
- Pour the batter into a greased 9x5 inch loaf pan.
- Bake at 350°F (175°C) for 45–55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
