Ingredients:
- 1 lb lean ground beef (93/7 blend)
- 1 cup small curd cottage cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp smoked paprika
- 0.25 tsp sea salt
- 0.25 tsp cracked black pepper
- 3 cups fresh baby spinach, packed
- 1 tbsp avocado oil
Instructions:
- Heat avocado oil in a large skillet over medium high heat until shimmering.
- Add the 1 lb lean ground beef to the hot pan. Spread it out in an even layer.
- Sear the beef for 3 minutes without stirring until a dark crust forms.
- Break the meat into small crumbles using a wooden spoon.
- Sprinkle the garlic powder, onion powder, smoked paprika, sea salt, and black pepper over the meat.
- Stir the spices in and cook for 2 minutes until the beef is no longer pink.
- Fold in the 3 cups fresh baby spinach. Work in batches if your pan is small.
- Sauté for 1 minute until the spinach is wilted and vibrant green.
- Remove the skillet from the heat source immediately.
- Stir in the 1 cup small curd cottage cheese until creamy and thoroughly combined.
