Ingredients:
- 1 lb ground beef
- 2 cups shredded hash browns
- 6 medium corn tortillas, cut into 1-inch strips
- 1 medium yellow onion, diced
- 4 oz diced green chilis
- 12 large eggs
- 1/2 cup whole milk
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded sharp cheddar cheese
Instructions:
- Heat a large skillet over medium-high heat. Add the ground beef and diced onion, cooking until the meat is browned and onions are translucent. Drain excess grease thoroughly.
- Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- Layer the patted-dry hash browns across the bottom of the baking dish, followed by the corn tortilla strips.
- Spoon the browned meat and green chilis evenly over the tortilla layer, then sprinkle half of the combined Monterey Jack and Cheddar cheeses over the meat.
- In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, smoked paprika, salt, and black pepper until combined but not frothy.
- Pour the egg mixture slowly over the layers in the baking dish, ensuring it fills all gaps. Top with the remaining shredded cheese.
- Bake for 35-40 minutes until the center is set and the edges are golden brown.
