Ingredients:

  • 1 lb ground beef
  • 2 cups shredded hash browns
  • 6 medium corn tortillas, cut into 1-inch strips
  • 1 medium yellow onion, diced
  • 4 oz diced green chilis
  • 12 large eggs
  • 1/2 cup whole milk
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese

Instructions:

  1. Heat a large skillet over medium-high heat. Add the ground beef and diced onion, cooking until the meat is browned and onions are translucent. Drain excess grease thoroughly.
  2. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  3. Layer the patted-dry hash browns across the bottom of the baking dish, followed by the corn tortilla strips.
  4. Spoon the browned meat and green chilis evenly over the tortilla layer, then sprinkle half of the combined Monterey Jack and Cheddar cheeses over the meat.
  5. In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, smoked paprika, salt, and black pepper until combined but not frothy.
  6. Pour the egg mixture slowly over the layers in the baking dish, ensuring it fills all gaps. Top with the remaining shredded cheese.
  7. Bake for 35-40 minutes until the center is set and the edges are golden brown.
