Ingredients:
- 1 cup (200g) Granulated white sugar
- 1/2 cup (120ml) Light corn syrup
- 1/8 tsp Salt
- 1 1/2 cups (225g) Raw or roasted almonds
- 1 tbsp (14g) Unsalted butter
- 1 tsp (5ml) Pure vanilla extract
- 1 tsp (5g) Baking soda
Instructions:
- In a 1.5 or 2-quart microwave-safe glass bowl, stir together the granulated sugar, light corn syrup, and salt until well combined.
- Microwave the sugar mixture on high for 4 minutes until bubbling and clear.
- Carefully stir the almonds and unsalted butter into the hot sugar mixture. Microwave on high for another 3 to 5 minutes, watching for a light golden amber color and listening for the almonds to smell toasted.
- Immediately stir in the vanilla extract and baking soda; the mixture will foam up and become light and opaque.
- Quickly pour the foaming mixture onto a baking sheet lined with parchment paper or a silicone mat. Spread thin with a spatula and let cool completely until firm before breaking into pieces.
