Ingredients:

  • 1 cup (200g) Granulated white sugar
  • 1/2 cup (120ml) Light corn syrup
  • 1/8 tsp Salt
  • 1 1/2 cups (225g) Raw or roasted almonds
  • 1 tbsp (14g) Unsalted butter
  • 1 tsp (5ml) Pure vanilla extract
  • 1 tsp (5g) Baking soda

Instructions:

  1. In a 1.5 or 2-quart microwave-safe glass bowl, stir together the granulated sugar, light corn syrup, and salt until well combined.
  2. Microwave the sugar mixture on high for 4 minutes until bubbling and clear.
  3. Carefully stir the almonds and unsalted butter into the hot sugar mixture. Microwave on high for another 3 to 5 minutes, watching for a light golden amber color and listening for the almonds to smell toasted.
  4. Immediately stir in the vanilla extract and baking soda; the mixture will foam up and become light and opaque.
  5. Quickly pour the foaming mixture onto a baking sheet lined with parchment paper or a silicone mat. Spread thin with a spatula and let cool completely until firm before breaking into pieces.
