Ingredients:
- 1 pre-baked 9-inch pie crust
- 1 package (85g) strawberry-flavored gelatin
- 1/2 cup (120ml) water
- 2 tbsp (16g) cornstarch
- 1/4 cup (60ml) cold water
- 1/2 cup (100g) granulated sugar
- 2 lbs (900g) fresh strawberries, hulled and sliced
- 1 cup (240ml) heavy whipping cream
Instructions:
- Combine the strawberry gelatin, sugar, and 1/2 cup (120ml) of water in a saucepan over medium heat. Whisk constantly until the mixture is completely dissolved and begins to simmer.
- In a small bowl, whisk the cornstarch and 1/4 cup (60ml) cold water into a smooth slurry.
- Pour the slurry into the boiling mixture and whisk vigorously for 1 minute until the glaze becomes glossy and thickens to a syrup-like consistency, then remove from heat.
- Place sliced strawberries into the pre-baked pie crust, piling them high in the center to create a dome.
- Pour the hot glaze slowly over the berries, using a spoon to ensure the syrup seeps into every crevice and coats every berry.
- Allow the pie to cool on the counter for 30 minutes.
- Transfer the pie to the refrigerator and chill for at least 4 hours (or overnight) to ensure the gelatin sets.
- Serve each slice with a dollop of whipped heavy cream.
