Ingredients:

  • 2.25 cups (280g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) salt
  • 2 tsp (5g) ground cinnamon
  • 0.5 tsp (1g) ground nutmeg
  • 0.25 tsp (0.5g) ground cloves
  • 0.25 tsp (0.5g) ground ginger
  • 0.75 cup (170g) unsalted butter, softened
  • 0.75 cup (150g) packed light brown sugar
  • 0.25 cup (50g) granulated sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (15ml) molasses

Instructions:

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking soda, salt, ground cinnamon, nutmeg, cloves, and ginger until no clumps remain.
  2. In a large bowl, beat the softened butter with the brown sugar and granulated sugar until the mixture is pale and fluffy. Stir in the egg, vanilla extract, and molasses, beating for 2 minutes until smooth.
  3. Gradually pour the dry spice mixture into the wet ingredients. Using a spatula, fold gently until just combined; do not over-mix.
  4. Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheets. Bake for 10–12 minutes until the edges are set but the centers remain slightly soft.
