Ingredients:
- 2.25 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 2 tsp (5g) ground cinnamon
- 0.5 tsp (1g) ground nutmeg
- 0.25 tsp (0.5g) ground cloves
- 0.25 tsp (0.5g) ground ginger
- 0.75 cup (170g) unsalted butter, softened
- 0.75 cup (150g) packed light brown sugar
- 0.25 cup (50g) granulated sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) molasses
Instructions:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking soda, salt, ground cinnamon, nutmeg, cloves, and ginger until no clumps remain.
- In a large bowl, beat the softened butter with the brown sugar and granulated sugar until the mixture is pale and fluffy. Stir in the egg, vanilla extract, and molasses, beating for 2 minutes until smooth.
- Gradually pour the dry spice mixture into the wet ingredients. Using a spatula, fold gently until just combined; do not over-mix.
- Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheets. Bake for 10–12 minutes until the edges are set but the centers remain slightly soft.
