Ingredients:
- ½ cup (115g) vegan butter, browned
- ½ cup (100g) packed light brown sugar
- ¼ cup (50g) granulated white sugar
- 2 tbsp (30ml) plant-based milk (unsweetened)
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (190g) all-purpose flour
- ½ tsp (3g) baking soda
- ¼ tsp (1.5g) salt
- 1 tsp (2g) ground cinnamon
- ¼ tsp (0.5g) ground ginger
- ⅛ tsp (0.2g) ground nutmeg
- ⅛ tsp (0.2g) ground cloves
- 1 cup (170g) vegan dark chocolate chunks
Instructions:
- Melt the vegan butter in a saucepan over medium heat. Whisk constantly until it foams and turns a golden, mahogany-colored brown with a nutty aroma.
- Immediately remove the browned butter from heat and whisk in the brown and white sugars until combined. Stir in the plant milk and vanilla.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- Gradually fold the dry ingredients into the wet butter mixture using a spatula. Stir until just combined; do not overmix.
- Fold in the dark chocolate chunks.
- Scoop rounded tablespoons of dough onto a parchment-lined sheet, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 10–12 minutes, or until the edges are set but the centers still look slightly soft.
- Let the cookies rest on the pan for 5 minutes to firm up before transferring.
