Ingredients:
- 1 cup (240ml) fresh lime juice
- 2 bunches (40g) fresh mint leaves
- 1/2 cup (100g) granulated sugar
- 2 cups (475ml) lychee juice or canned lychee syrup
- 4 cups (1 Liter) chilled club soda
- 2 cups (300g) large ice cubes
- 1 cup (150g) fresh raspberries
- 16 whole canned lychees, pitted
- 1 thinly sliced cucumber
Instructions:
- Place the fresh mint leaves and granulated sugar into the bottom of your pitcher. Press firmly 5-6 times until the aroma is pungent.
- Pour the fresh lime juice over the mint and sugar. Stir vigorously until the sugar crystals vanish.
- Stir in the 2 cups of lychee juice or syrup. This creates the syrup base for your drink.
- Add the 16 pitted lychees and the 1 cup of fresh raspberries to the pitcher.
- Add your 2 cups of large ice cubes. Stir gently until the outside of the pitcher feels cold.
- Slide your thinly sliced cucumber ribbons down the sides of the pitcher.
- Gently pour the 4 cups of chilled club soda over the back of a spoon into the pitcher.
- Lift the fruit from the bottom once with your long spoon. Watch for the color to swirl but don't over mix.
- Taste a small sip. It should be tart, bubbly, and fragrant.
