Ingredients:

  • 1 large red onion (150g), thinly sliced
  • 3 cloves garlic (15g), thinly sliced or smashed
  • 1 cup (240ml) Apple Cider Vinegar
  • 1 tbsp (15g) Kosher salt
  • 1 tbsp (12g) Granulated sugar
  • ½ tsp (3g) Black peppercorns

Instructions:

  1. Slice the red onion into thin half moons. Place them into a clean glass jar along with the sliced or smashed garlic.
  2. Combine the apple cider vinegar, salt, sugar, and peppercorns in a small saucepan over medium heat.
  3. Stir constantly for 2-3 minutes until the salt and sugar have fully dissolved and the liquid is steaming.
  4. Remove the pan from heat. Do not let it reach a rolling boil.
  5. Pour the hot brine directly over the onions and garlic in the jar.
  6. Use a spoon to press the onions down until they are fully submerged.
  7. Seal the jar and let it sit at room temperature for 30 minutes.
  8. Watch as the liquid cools and the onions turn bright pink.
  9. Move the jar to the fridge once the liquid is no longer hot to the touch.
