Ingredients:
- 1 large red onion (150g), thinly sliced
- 3 cloves garlic (15g), thinly sliced or smashed
- 1 cup (240ml) Apple Cider Vinegar
- 1 tbsp (15g) Kosher salt
- 1 tbsp (12g) Granulated sugar
- ½ tsp (3g) Black peppercorns
Instructions:
- Slice the red onion into thin half moons. Place them into a clean glass jar along with the sliced or smashed garlic.
- Combine the apple cider vinegar, salt, sugar, and peppercorns in a small saucepan over medium heat.
- Stir constantly for 2-3 minutes until the salt and sugar have fully dissolved and the liquid is steaming.
- Remove the pan from heat. Do not let it reach a rolling boil.
- Pour the hot brine directly over the onions and garlic in the jar.
- Use a spoon to press the onions down until they are fully submerged.
- Seal the jar and let it sit at room temperature for 30 minutes.
- Watch as the liquid cools and the onions turn bright pink.
- Move the jar to the fridge once the liquid is no longer hot to the touch.
