Ingredients:
- 500g 80/20 ground beef
- 4 large Greek-style pitas
- 15ml extra virgin olive oil
- 3 cloves garlic, minced
- 5g dried oregano
- 15g fresh parsley, finely chopped
- 2g ground cumin
- 2g ground coriander
- 120g tzatziki sauce
- 1 medium cucumber, diced
- 100g cherry tomatoes, quartered
- 0.5 small red onion, thinly sliced
- 50g feta cheese, crumbled
- 1 lemon wedge
- Sea salt to taste
- Black pepper to taste
Instructions:
- In a large mixing bowl, combine the ground meat, minced garlic, dried oregano, chopped parsley, cumin, and coriander. Mix gently until spices are evenly distributed without overworking the meat.
- Divide the meat mixture into 4 equal portions, approximately 125g each, and roll them into loose balls.
- Preheat a cast iron skillet or flat-top griddle over medium-high heat. Add the olive oil.
- Place a meat ball on the hot skillet and immediately place a pita bread directly on top of the meat.
- Using a heavy burger press or large metal spatula, press down firmly on the pita to smash the meat into a thin, even layer that adheres to the bread.
- Cook for 3-4 minutes until the meat is deeply browned and a crispy crust has formed. Flip the entire pita and meat assembly and toast the bread side for 2 minutes.
- Remove from heat and top with tzatziki, diced cucumber, tomatoes, red onion, and crumbled feta. Squeeze fresh lemon over the top before serving.
