Ingredients:

  • 1 cup fresh strawberries, hulled and halved
  • 1 large mango, peeled and cubed into 1-inch pieces
  • 2 cups fresh pineapple, cubed into 1-inch pieces
  • 1 cup fresh green grapes
  • 1 cup large blueberries or purple grapes
  • 2 tbsp fresh lime juice, strained
  • 1 tbsp liquid clover honey
  • 1 tsp fresh mint, finely chiffonaded

Instructions:

  1. Wash all fruit in cold water and pat completely dry. Cut the mango and pineapple into uniform 1-inch cubes to ensure easy eating and a professional look.
  2. Thread the fruit onto 10-inch blunt-tip bamboo skewers in reverse rainbow order: start with a purple grape, followed by a green grape, a pineapple cube, a mango cube, and top with a strawberry half. Leave 1.5 inches at the bottom as a handle.
  3. In a small bowl, whisk the lime juice and honey until fully emulsified. Use a spray bottle or pastry brush to lightly coat each skewer with the mixture, then garnish with chiffonaded mint.
