Ingredients:

  • 1 cup (240g) full-fat sour cream
  • 0.25 cup (60g) high-quality mayonnaise
  • 0.5 cup (120g) prepared horseradish, slightly drained
  • 1 tbsp (15g) fresh horseradish root, finely grated (optional)
  • 1 tsp (5ml) apple cider vinegar
  • 1 tsp (5ml) Worcestershire sauce
  • 0.5 tsp (3g) kosher salt
  • 0.25 tsp (1g) freshly cracked white pepper
  • 2 tbsp (6g) fresh chives, finely minced

Instructions:

  1. In a non-reactive glass or stainless steel mixing bowl, whisk together the sour cream and mayonnaise until the mixture is completely smooth and free of streaks.
  2. Gently fold in the prepared horseradish, grated fresh horseradish (if using), apple cider vinegar, and Worcestershire sauce using a spatula.
  3. Season with kosher salt, white pepper, and minced chives. Fold gently to combine without over-aerating.
  4. Cover the bowl and refrigerate for at least 30 minutes. This resting period allows the volatile oils in the horseradish to stabilize and the flavors to meld.
