Ingredients:

  • 1 sugar pumpkin (approx. 4 lbs)
  • 1 tbsp neutral oil
  • 1/2 tsp fine sea salt

Instructions:

  1. Carefully cut the pumpkin in half from stem to base.
  2. Use a metal spoon to scrape out all the seeds and stringy pulp from the center.
  3. Lightly brush the interior flesh with oil and sprinkle with salt to enhance the natural sweetness.
  4. Place the pumpkin halves cut-side down on a parchment-lined baking sheet.
  5. Roast at 400°F (200°C) for 45 to 60 minutes until the skin is shriveled and a knife slides into the flesh with zero resistance.
  6. Let the halves cool for 10 minutes to allow handling.
  7. Scoop the softened flesh away from the skin using a sturdy spoon.
  8. Press the flesh through a fine-mesh sieve, use a potato masher, or process through a food mill until the desired smoothness is achieved.
