Ingredients:
- 1 sugar pumpkin (approx. 4 lbs)
- 1 tbsp neutral oil
- 1/2 tsp fine sea salt
Instructions:
- Carefully cut the pumpkin in half from stem to base.
- Use a metal spoon to scrape out all the seeds and stringy pulp from the center.
- Lightly brush the interior flesh with oil and sprinkle with salt to enhance the natural sweetness.
- Place the pumpkin halves cut-side down on a parchment-lined baking sheet.
- Roast at 400°F (200°C) for 45 to 60 minutes until the skin is shriveled and a knife slides into the flesh with zero resistance.
- Let the halves cool for 10 minutes to allow handling.
- Scoop the softened flesh away from the skin using a sturdy spoon.
- Press the flesh through a fine-mesh sieve, use a potato masher, or process through a food mill until the desired smoothness is achieved.
