Ingredients:

  • 1 large red onion, thinly sliced (approx. 340g)
  • 1/2 tsp sea salt
  • 1 cup apple cider vinegar
  • 1/2 cup filtered water
  • 1/4 cup raw honey
  • 1 tsp sea salt

Instructions:

  1. Using a mandoline or knife, slice the red onion into paper-thin half-moons.
  2. Place the sliced onions directly into a 16-ounce glass mason jar and toss with 1/2 tsp of salt. Let them sit for 5 minutes to draw out excess moisture.
  3. In a small saucepan over medium heat, combine apple cider vinegar, water, honey, and 1 tsp of salt.
  4. Whisk constantly until the honey is completely dissolved and the liquid reaches a gentle simmer, ensuring it does not reach a rolling boil.
  5. Carefully pour the hot brine over the sliced onions in the jar. Use a spoon to press the onions down until fully submerged.
  6. Seal the lid tightly and let the jar sit at room temperature for 30 minutes before moving it to the refrigerator.
