Ingredients:
- 1 large red onion, thinly sliced (approx. 340g)
- 1/2 tsp sea salt
- 1 cup apple cider vinegar
- 1/2 cup filtered water
- 1/4 cup raw honey
- 1 tsp sea salt
Instructions:
- Using a mandoline or knife, slice the red onion into paper-thin half-moons.
- Place the sliced onions directly into a 16-ounce glass mason jar and toss with 1/2 tsp of salt. Let them sit for 5 minutes to draw out excess moisture.
- In a small saucepan over medium heat, combine apple cider vinegar, water, honey, and 1 tsp of salt.
- Whisk constantly until the honey is completely dissolved and the liquid reaches a gentle simmer, ensuring it does not reach a rolling boil.
- Carefully pour the hot brine over the sliced onions in the jar. Use a spoon to press the onions down until fully submerged.
- Seal the lid tightly and let the jar sit at room temperature for 30 minutes before moving it to the refrigerator.
