Ingredients:
- 1 medium red onion (approx. 8 oz / 225g), thinly sliced into half-moons
- 1 cup (240ml) apple cider vinegar
- ½ cup (120ml) filtered water
- 1 tbsp (18g) sea salt
- ⅓ cup (115g) honey
- 1 tsp (2g) red pepper flakes
- ½ tsp (1g) cayenne pepper
Instructions:
- Slice the red onion into half moons about 1/8 inch thick. Note: Uniform slices ensure they pickle at the same rate
- Pack the sliced onions tightly into your glass jar.
- Pour 240ml apple cider vinegar, 120ml water, 115g honey, 18g salt, 2g red pepper flakes, and 1g cayenne into a saucepan.
- Set heat to medium and stir constantly.
- Simmer the liquid for about 5 minutes until the honey and salt disappear and it bubbles gently.
- Pour the hot brine directly over the onions. Make sure they are fully covered.
- Seal the lid immediately. Note: This traps the steam to help the onions soften slightly
- Leave the jar on the counter for 30 minutes.
- Move the jar to the fridge for at least 2 hours.
