Ingredients:
- 8 oz cream cheese, softened
- 0.5 cup full-fat sour cream
- 1 packet (28g) ranch seasoning mix
- 1 tsp lemon juice
- 2 cups rotisserie chicken breast, finely diced
- 3 large hard-boiled eggs, chopped
- 1 cup sharp cheddar cheese, shredded
- 8 slices thick-cut bacon, fried and crumbled
- 2 cups romaine lettuce, shredded
- 1 cup cherry tomatoes, quartered
- 1 large avocado, diced
- 0.5 tsp lime juice
- 0.5 cup blue cheese crumbles
- 3 stalks green onions, sliced
Instructions:
- In a medium bowl, use a hand mixer to whip the softened cream cheese, sour cream, ranch seasoning, and lemon juice for 2 minutes until light and aerated.
- Spread the whipped cream cheese mixture evenly into the bottom of a 9x9 inch glass dish or trifle bowl.
- Layer the diced rotisserie chicken breast directly onto the base, pressing down slightly to secure it.
- Add a layer of chopped hard-boiled eggs, followed by a layer of shredded sharp cheddar cheese.
- Distribute the crumbled bacon over the cheese, then top with shredded romaine lettuce, cherry tomatoes, and diced avocado (pre-tossed in lime juice).
- Finish by sprinkling blue cheese crumbles and sliced green onions over the top. Chill in the fridge for at least 30 minutes until the base is firm and set.
