Ingredients:

  • 8 oz cream cheese, softened
  • 0.5 cup full-fat sour cream
  • 1 packet (28g) ranch seasoning mix
  • 1 tsp lemon juice
  • 2 cups rotisserie chicken breast, finely diced
  • 3 large hard-boiled eggs, chopped
  • 1 cup sharp cheddar cheese, shredded
  • 8 slices thick-cut bacon, fried and crumbled
  • 2 cups romaine lettuce, shredded
  • 1 cup cherry tomatoes, quartered
  • 1 large avocado, diced
  • 0.5 tsp lime juice
  • 0.5 cup blue cheese crumbles
  • 3 stalks green onions, sliced

Instructions:

  1. In a medium bowl, use a hand mixer to whip the softened cream cheese, sour cream, ranch seasoning, and lemon juice for 2 minutes until light and aerated.
  2. Spread the whipped cream cheese mixture evenly into the bottom of a 9x9 inch glass dish or trifle bowl.
  3. Layer the diced rotisserie chicken breast directly onto the base, pressing down slightly to secure it.
  4. Add a layer of chopped hard-boiled eggs, followed by a layer of shredded sharp cheddar cheese.
  5. Distribute the crumbled bacon over the cheese, then top with shredded romaine lettuce, cherry tomatoes, and diced avocado (pre-tossed in lime juice).
  6. Finish by sprinkling blue cheese crumbles and sliced green onions over the top. Chill in the fridge for at least 30 minutes until the base is firm and set.
