Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 cup / 225g)
  • 1/2 cup pure maple syrup (120ml)
  • 1/4 cup sour cream (60g)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract (5ml)
  • 1 3/4 cups all-purpose flour (210g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 1 tsp ground cinnamon (2g)
  • 1/2 cup chopped walnuts, toasted (60g)
  • 1/4 cup powdered sugar (30g)
  • 1 tbsp pure maple syrup (15ml)
  • 1 tsp milk or cream (5ml)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas until they reach a smooth consistency with only a few small lumps remaining.
  3. Whisk in the maple syrup, sour cream, egg, and vanilla extract until the mixture is fully emulsified.
  4. Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
  5. Gently fold the dry ingredients into the wet using a spatula until just combined, then fold in the toasted walnuts.
  6. Pour the batter into the pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Optional: Whisk together powdered sugar, 1 tbsp maple syrup, and milk or cream to create a glaze and drizzle over the cooled bread.
