Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 2 tbsp (30ml) pure maple syrup
- 1 tsp (5ml) maple extract
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 cup (115g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tsp (5ml) maple extract
- 1 tbsp (15ml) heavy cream
Instructions:
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 2–3 minutes).
- Mix in the egg, maple syrup, and maple extract until well blended and smooth.
- Sift together the flour, baking soda, and salt, then slowly stir the dry mix into the butter mixture until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C).
- On a lightly floured surface, roll the chilled dough to 1/4 inch (6mm) thickness.
- Use the maple leaf cutter to stamp out cookies and place them on a parchment-lined sheet about 1 inch apart.
- Bake for 8–10 minutes until edges are set and centers are pale golden brown.
- Cool cookies on the pan for 5 minutes before transferring to a wire rack to cool completely.
- Beat the softened butter until creamy, then gradually add powdered sugar, maple syrup, and maple extract.
- Beat on high for 2 minutes, whipping in heavy cream one teaspoon at a time if the filling is too stiff.
- Spoon approximately 1 tablespoon of filling onto a cookie and top with another cookie to create a sandwich.
