Ingredients:
- 2 medium red onions, very thinly sliced
- 1 medium jalapeño, thinly sliced
- 1 cup apple cider vinegar
- 1/4 cup fresh lime juice
- 1 tbsp sea salt
- 1 tbsp granulated sugar
- 1 tsp dried Mexican oregano
- 1/2 tsp black peppercorns
- 2 cloves garlic, smashed
Instructions:
- Peel the red onions and cut them in half from pole to pole.
- Using a mandoline or a very sharp knife, slice the onions into thin half-moons approximately 1/8 inch thick.
- Pack the sliced onions and jalapeños tightly into a glass jar, ensuring they are evenly distributed.
- In a small bowl, whisk together the vinegar, lime juice, salt, and sugar until the salt and sugar are completely dissolved.
- Stir in the Mexican oregano, peppercorns, and smashed garlic cloves.
- Pour the liquid mixture over the onions, ensuring the onions are completely submerged. Press them down with a spoon if they float.
- Seal the jar tightly and let it sit at room temperature for at least 30 minutes.
