Ingredients:

  • 2 medium red onions, very thinly sliced
  • 1 medium jalapeño, thinly sliced
  • 1 cup apple cider vinegar
  • 1/4 cup fresh lime juice
  • 1 tbsp sea salt
  • 1 tbsp granulated sugar
  • 1 tsp dried Mexican oregano
  • 1/2 tsp black peppercorns
  • 2 cloves garlic, smashed

Instructions:

  1. Peel the red onions and cut them in half from pole to pole.
  2. Using a mandoline or a very sharp knife, slice the onions into thin half-moons approximately 1/8 inch thick.
  3. Pack the sliced onions and jalapeños tightly into a glass jar, ensuring they are evenly distributed.
  4. In a small bowl, whisk together the vinegar, lime juice, salt, and sugar until the salt and sugar are completely dissolved.
  5. Stir in the Mexican oregano, peppercorns, and smashed garlic cloves.
  6. Pour the liquid mixture over the onions, ensuring the onions are completely submerged. Press them down with a spoon if they float.
  7. Seal the jar tightly and let it sit at room temperature for at least 30 minutes.
