Ingredients:

  • 1.5 cups (190g) All-purpose flour
  • 0.5 cup (45g) Unsweetened cocoa powder
  • 1 tsp (5g) Baking soda
  • 0.5 tsp (3g) Salt
  • 0.5 cup (115g) Unsalted butter, melted and cooled
  • 0.75 cup (150g) Brown sugar, packed
  • 2 Large eggs, room temperature
  • 1 tsp (5ml) Pure vanilla extract
  • 1.5 cups (225g) Grated zucchini, loosely packed
  • 1 cup (170g) Semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper. Grate the zucchini using the medium hole of a box grater, keeping all natural juices.
  2. In a large bowl, whisk together the melted butter and brown sugar until smooth. Beat in the eggs one at a time, followed by the vanilla extract, until the mixture is glossy. Fold in the grated zucchini.
  3. Sift the flour, cocoa powder, baking soda, and salt directly into the wet mixture. Using a spatula, gently fold the ingredients together until no white flour streaks remain. Fold in the chocolate chips last.
  4. Pour the batter into the prepared loaf pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  5. Allow the bread to cool in the pan before removing and slicing.
