Ingredients:
- 1.5 cups (190g) All-purpose flour
- 0.5 cup (45g) Unsweetened cocoa powder
- 1 tsp (5g) Baking soda
- 0.5 tsp (3g) Salt
- 0.5 cup (115g) Unsalted butter, melted and cooled
- 0.75 cup (150g) Brown sugar, packed
- 2 Large eggs, room temperature
- 1 tsp (5ml) Pure vanilla extract
- 1.5 cups (225g) Grated zucchini, loosely packed
- 1 cup (170g) Semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper. Grate the zucchini using the medium hole of a box grater, keeping all natural juices.
- In a large bowl, whisk together the melted butter and brown sugar until smooth. Beat in the eggs one at a time, followed by the vanilla extract, until the mixture is glossy. Fold in the grated zucchini.
- Sift the flour, cocoa powder, baking soda, and salt directly into the wet mixture. Using a spatula, gently fold the ingredients together until no white flour streaks remain. Fold in the chocolate chips last.
- Pour the batter into the prepared loaf pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Allow the bread to cool in the pan before removing and slicing.
