Ingredients:
- 2 cups (250g) All-purpose flour
- 1 tsp (5g) Baking soda
- ½ tsp (3g) Salt
- 2 tsp (5g) Ground cinnamon
- 1 tsp (2g) Ground ginger
- ½ tsp (1g) Ground nutmeg
- ¼ tsp (0.5g) Ground cloves
- 1 cup (245g) 100% Pure pumpkin puree
- ½ cup (120ml) Maple syrup
- ½ cup (120ml) Neutral oil
- 2 Large eggs
- 1 tsp (5ml) Vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan and line the bottom with parchment paper.
- Sift the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves into a medium bowl. Note: This prevents clumps of baking soda from leaving bitter spots.
- Beat the eggs and maple syrup in a large bowl until the mixture is smooth.
- Whisk in the pumpkin puree, oil, and vanilla extract. Stir until the batter is velvety and fully combined.
- Pour the dry ingredients into the wet mixture.
- Fold the batter together gently with a rubber spatula until no streaks of flour remain. Note: Stop stirring as soon as the flour disappears to keep the bread tender.
- Pour the batter into the prepared pan and smooth the top with your spatula.
- Bake for 55–65 minutes until a toothpick inserted into the center comes out clean or just a few moist crumbs.
- Let the Pumpkin Spice Bread cool in the pan for 10 minutes before transferring it to a wire rack.
