Ingredients:

  • 2 cups (250g) All-purpose flour
  • 1 tsp (5g) Baking soda
  • ½ tsp (3g) Salt
  • 2 tsp (5g) Ground cinnamon
  • 1 tsp (2g) Ground ginger
  • ½ tsp (1g) Ground nutmeg
  • ¼ tsp (0.5g) Ground cloves
  • 1 cup (245g) 100% Pure pumpkin puree
  • ½ cup (120ml) Maple syrup
  • ½ cup (120ml) Neutral oil
  • 2 Large eggs
  • 1 tsp (5ml) Vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan and line the bottom with parchment paper.
  2. Sift the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves into a medium bowl. Note: This prevents clumps of baking soda from leaving bitter spots.
  3. Beat the eggs and maple syrup in a large bowl until the mixture is smooth.
  4. Whisk in the pumpkin puree, oil, and vanilla extract. Stir until the batter is velvety and fully combined.
  5. Pour the dry ingredients into the wet mixture.
  6. Fold the batter together gently with a rubber spatula until no streaks of flour remain. Note: Stop stirring as soon as the flour disappears to keep the bread tender.
  7. Pour the batter into the prepared pan and smooth the top with your spatula.
  8. Bake for 55–65 minutes until a toothpick inserted into the center comes out clean or just a few moist crumbs.
  9. Let the Pumpkin Spice Bread cool in the pan for 10 minutes before transferring it to a wire rack.
