Ingredients:

  • 10 large eggs
  • 1 tbsp avocado oil
  • 0.5 tsp fine sea salt
  • 0.25 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 350°F (175°C). Generously coat the interior of an 8x4-inch heat-proof glass loaf pan with the neutral oil.
  2. Crack all 10 eggs directly into the prepared loaf pan. Whisk gently with salt and pepper for a uniform yellow texture, or leave whole for a marbled white-and-yolk look.
  3. Place the egg pan inside a larger deep baking dish. Fill the outer dish with hot tap water until it reaches halfway up the sides of the egg pan to create a bain-marie.
  4. Bake for 25–30 minutes until the center is firm and no longer jiggling. The top should appear matte.
  5. Remove from the water bath and let rest for 5 minutes. Run a knife around the edges, flip onto a cutting board, and dice into cubes.
