Ingredients:
- 1 cup (170g) quinoa, thoroughly rinsed
- 2 cups (475ml) water
- 1/2 tsp (3g) salt
- 1 tbsp (15ml) olive oil
- 1 clove (3g) garlic, minced
- 1/4 tsp (1g) black pepper
Instructions:
- Place a saucepan over medium heat and add the olive oil. Once shimmering, stir in the minced garlic for 30 seconds until fragrant.
- Add the rinsed and dried quinoa to the pan. Stir constantly for 2–3 minutes until the grains smell nutty and turn a pale golden-brown.
- Pour in the water and salt. Increase heat to high and bring to a rolling boil.
- Immediately reduce heat to low, cover with a tight-fitting lid, and simmer for 15 minutes without lifting the lid, until liquid is absorbed.
- Remove the pan from the heat. Keep the lid on and let the pot sit undisturbed for 5 minutes.
- Remove the lid and use a fork to gently fluff the grains.
