Ingredients:

  • 1 cup (170g) quinoa, thoroughly rinsed
  • 2 cups (475ml) water
  • 1/2 tsp (3g) salt
  • 1 tbsp (15ml) olive oil
  • 1 clove (3g) garlic, minced
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Place a saucepan over medium heat and add the olive oil. Once shimmering, stir in the minced garlic for 30 seconds until fragrant.
  2. Add the rinsed and dried quinoa to the pan. Stir constantly for 2–3 minutes until the grains smell nutty and turn a pale golden-brown.
  3. Pour in the water and salt. Increase heat to high and bring to a rolling boil.
  4. Immediately reduce heat to low, cover with a tight-fitting lid, and simmer for 15 minutes without lifting the lid, until liquid is absorbed.
  5. Remove the pan from the heat. Keep the lid on and let the pot sit undisturbed for 5 minutes.
  6. Remove the lid and use a fork to gently fluff the grains.
