Ingredients:
- 1 medium (approx. 6 oz / 170g) red onion, thinly sliced
- 1 cup (240ml) apple cider vinegar
- ½ cup (120ml) filtered water
- 2 tbsp (25g) granulated sugar
- 1 ½ tsp (9g) fine sea salt
Instructions:
- Thinly slice the red onion into half-moons approximately 1/8 inch (3mm) thick. Pack the sliced onions tightly into a clean 16 oz wide-mouth Mason jar.
- Combine the apple cider vinegar, water, sugar, and salt in a small saucepan. Heat over medium heat, stirring occasionally, until the sugar and salt have completely dissolved. Do not let the brine reach a rolling boil.
- Pour the hot ACV brine directly over the onions in the jar, ensuring they are completely submerged. Press down with a spoon to remove air bubbles.
- Let the jar sit at room temperature for 30 minutes until the onions transition to a vibrant pink color.
