Ingredients:

  • 2 cups (300g) Granny Smith apples, peeled and diced
  • 2 tbsp (28g) unsalted butter
  • 2 tbsp (25g) brown sugar
  • 1/2 cup (65g) all-purpose flour
  • 1/2 cup (100g) brown sugar, packed
  • 4 tbsp (56g) cold unsalted butter, cubed
  • 1/4 tsp (1g) salt
  • 1 cup (245g) canned pumpkin puree
  • 1/2 cup (120ml) vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) baking powder
  • 2 tsp (4g) ground cinnamon
  • 1 tsp (2g) ground ginger
  • 1/4 tsp (1g) ground cloves
  • 1/2 tsp (3g) salt

Instructions:

  1. Melt 2 tbsp butter in a skillet over medium heat. Add diced apples and 2 tbsp brown sugar. Cook for 5–7 minutes until apples are tender and caramelized. Set aside to cool.
  2. In a small bowl, combine 65g flour, 100g brown sugar, and 1g salt. Rub cold cubed butter into the mixture with a fork or fingers until coarse crumbs form. Refrigerate until needed.
  3. In a large bowl, beat pumpkin puree, granulated sugar, oil, eggs, and vanilla extract until smooth and pale.
  4. In a separate bowl, sift together 250g flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt.
  5. Gradually mix the dry ingredients into the wet pumpkin mixture until just combined.
  6. Gently fold the caramelized apples into the batter.
  7. Pour batter into a 9-inch springform or Bundt pan and sprinkle the chilled crumble topping evenly over the surface.
  8. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
