Ingredients:
- 3 medium overripe bananas, mashed
- 1/2 cup pumpkin puree
- 1/2 cup neutral oil
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with oil or butter, or line it with parchment paper.
- In a large bowl, mash the bananas until mostly smooth.
- Whisk in the pumpkin puree, oil, brown sugar, egg, and vanilla extract. Stir until the mixture is cohesive and the sugar has mostly dissolved.
- Sift the flour, baking soda, cinnamon, pumpkin pie spice, and salt directly into the wet ingredients.
- Using a spatula, gently fold the dry ingredients into the wet until no streaks of flour remain. Do not overmix.
- Fold in the semi-sweet chocolate chips and chopped walnuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
