Ingredients:
- 2 tbsp unsalted butter, melted (for greasing)
- 2 ¼ cups (280g) all-purpose flour
- 1 ½ tsp (7g) baking soda
- 2 tsp (4g) ground cinnamon
- 1 tsp (2g) ground ginger
- ½ tsp (1g) ground nutmeg
- ½ tsp (3g) salt
- ½ cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 cup (200g) packed brown sugar
- 3 large eggs, room temperature
- 1 can (15 oz / 425g) pure pumpkin puree
- ½ cup (120g) sour cream, full fat
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) cream cheese, softened
- ¼ cup (57g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- Melt 2 tbsp of butter and brush every single nook and cranny of the Bundt pan. Dust the pan with flour or granulated sugar, tapping out the excess.
- Preheat the oven to 350°F (175°C).
- Sift the flour, baking soda, cinnamon, ginger, nutmeg, and salt together in a medium bowl.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until the mixture is pale and fluffy.
- Add eggs one at a time, beating well after each. Stir in the pumpkin puree, sour cream, and vanilla extract until the batter is smooth.
- Gradually fold the dry ingredients into the wet mixture using a spatula until just combined.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before inverting the pan onto a wire rack to cool completely.
- Beat cream cheese and butter until velvety. Slowly add powdered sugar and vanilla. Stir in heavy cream if the frosting is too stiff.
- Drizzle the glaze over the completely cooled cake.
