Ingredients:
- 4 oz (115g) cream cheese, softened
- 2 tbsp (25g) powdered sugar
- 1/4 tsp (1g) vanilla extract
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1/3 cup (80g) pumpkin puree (blotted dry)
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (3g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (0.5g) ground cloves
- 1/2 tsp (3g) salt
- 2 tbsp (16g) granulated sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth and velvety.
- Line a small tray with parchment paper. Drop 12 small teaspoons of the mixture onto the tray.
- Place the cream cheese dollops in the freezer for 30–60 minutes until firm.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the blotted pumpkin puree, egg, and vanilla extract until fully combined.
- In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
- Gradually add the dry ingredients to the wet mixture on low speed. Mix just until no streaks of flour remain; do not overmix.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Take a portion of dough, flatten it, place a frozen cheesecake core in the center, and seal the dough around it.
- Roll the stuffed cookie in a mixture of 2 tbsp granulated sugar and 1 tsp cinnamon.
- Bake for 12 minutes or until edges are set.
