Ingredients:
- 3 cups (375g) all-purpose flour
- 1 ½ tsp (7g) baking soda
- ½ tsp (3g) salt
- 2 tsp (5g) ground cinnamon
- 1 tsp (2g) ground ginger
- ¼ tsp (1g) ground cloves
- ¼ tsp (1g) ground nutmeg
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- ½ cup (100g) light brown sugar, packed
- 3 large eggs, room temperature
- 1 tbsp (13ml) vanilla extract
- 15 oz (425g) canned pumpkin puree
- 1 cup (240g) full-fat sour cream
- 2 cups (240g) powdered sugar
- 3 tbsp (45ml) pure maple syrup
- 2 tbsp (30ml) heavy cream
- ½ tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Generously grease a 10-cup Bundt pan with butter or baking spray and dust with flour, tapping out the excess.
- In a medium bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg until combined.
- In the main mixing bowl, cream the softened unsalted butter with granulated sugar and light brown sugar until light and fluffy, approximately 3 minutes.
- Beat in the eggs one at a time, then stir in the vanilla extract and canned pumpkin puree until smooth.
- Fold in the full-fat sour cream until incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring with a spatula just until no flour streaks remain; do not overmix.
- Pour the batter into the prepared Bundt pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan slightly before releasing onto a wire cooling rack.
- Prepare the maple glaze by whisking together powdered sugar, maple syrup, heavy cream, and cinnamon, then drizzle over the cooled cake.
