Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (2g) baking powder
- 1 tbsp (6g) ground cinnamon
- 1 tsp (2g) ground ginger
- 1/2 tsp (1g) ground cloves
- 1/4 tsp (1g) salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (245g) pumpkin puree
- 8 oz (225g) full-fat cream cheese, chilled
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (2g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt.
- In a separate larger bowl, cream the softened butter and sugar until pale and fluffy.
- Beat in the egg and vanilla extract, then stir in the pumpkin puree until smooth.
- Gradually fold in the dry ingredients until just combined; do not overmix.
- Scoop about 2 tablespoons of batter per pie onto a parchment-lined baking sheet or into a whoopie pie pan, spacing them 2 inches apart.
- Bake for 10–12 minutes until the tops spring back lightly when touched.
- Prepare filling by beating chilled cream cheese and softened butter together, then mixing in powdered sugar, cinnamon, vanilla, and heavy cream until smooth.
- Pipe filling onto the flat side of one cooled cake and top with another cake.
